Wedgwood serves inventive, modern Scottish dishes – inspired by fresh local ingredients. Chef Paul Wedgwood is a big believer in the quality of raw ingredients and goes to unusual lengths to find just the right products, whether that is dealing with countless artisan suppliers or foraging wild salad leaves and herbs for the next day's lunch dishes.
The menu changes seasonally and includes dishes like baked hake served with kale, saffron mash, smoked salmon basil and lemon butter. There are so many tempting options, Wedgwood has introduced ‘Deciding Time' where guests are given canapés and a glass of Champagne while they ponder the menu. The ambiance is relaxed and informal, service efficient but unhurried. There is a private dining room downstairs that seats 18.
