Since 2007, this whitewashed inn at the side of a winding Welsh country road has been run to huge acclaim by British culinary legend Shaun Hill. Dine in the smartly appointed yet casual dining room, or in good weather take a table on the patio or the idyllic garden. Hill's ingredient-led approach encompasses influences from all over the globe. Don't be deceived by the simple presentation, this is technically assured cooking that accentuates flavour.

The food is an eclectic mix, focused on the personal taste of Head Chef, Shaun Hill, coupled with sound cooking techniques, and not a particular country's cuisine. The essence of good ingredients is a unifying element. Start with Wye Valley asparagus with morels and hollandaise (spring on a plate) followed by tender squab pigeon with a Moroccan-style pastilla. Hill's desserts are always killer so leave room for that gingered nectarine and blueberry pudding.
