Modern English dishes range from starters of slow braised shoulder of lamb, white turnip puree, herb crust, fermented turnip, lamb sauce, Shetland scallop, pressed chorizo and pig cheek, sweet corn puree, roasted baby corn, micro coriander, to main courses of loin of venison, roasted parsnip, pickled blackberry, Jerusalem artichoke dumpling, 70% chocolate sauce or line caught wild sea bass, glazed chicken wing, broccoli puree, roasted Jerusalem artichoke, purple sprouting broccoli, chicken and cider cream.
