Briar House Barns is not a hotel, but it is worth knowing about: a private celebration venue set in 40 acres of countryside on the East Sussex and Kent border, just six minutes from the nearest train station and discreet enough to feel like your own estate for the weekend. The Great Barn at its heart holds anywhere from 40 to 1,000 guests thanks to a clever system of moving walls, with ivory drapery, chandeliers, soft colour-wash lighting and a long bank of glass opening onto the terrace. The team has been doing this since 2012.

What sets the place apart for a more discerning event is the freedom it offers. You choose your own caterer from a list the team can recommend, or bring in your own; you supply your own drinks with no corkage charged on table wines or speech toasts; and the layout is genuinely flexible rather than the usual one-size-fits-most.
