The kitchen is quite literally at the heart of Amaya, a modern Indian fine dining experience with a theatre style kitchen proudly on show in the dining room. Amaya serves more sophisticated grills than curries and has an array of grilling options to choose from including the tandoor (a hot clay oven), the Sigri (where cooking is done over a coal flame) and Tawa, a hot thick iron plate for griddling. There is not a conventional first and second course option here, instead a plethora of dishes are seasoned with delicately complex marinades and served tapas style as they are prepared. Situated in smart Knightsbridge this is an ideal spot for lunch with plenty of light, healthy dishes served up underneath the glazed light filled atrium.
