The Restaurant, Sopwell House


This magnificent Georgian house is the former country home of Lord Mountbatten. Now it’s home to the accomplished modern British cooking of chef Leigh Diggins. With its contrasting cream and aubergine tub chairs, dark wood paneled walls and porthole style circular mirrors, the dining room is contemporary elegance personified. There’s plenty of inventive touches on the seasonal menu. Scallops from the south coast come with an unusual fennel bavarois (a kind of mousse) while a main course of Haughley farm chicken and fresh pasta is accompanied by black cherries and a dandelion salad. A summer Sunday lunch might consist of a classic roast leg of Cornish lamb and mint jelly or a more adventurous seabass with herb gnocchi.
