The Weavers Shed

This converted 18th century cloth-finishing mill is home to the estimable talents of Yorkshireman Stephen Jackson, acolyte of the progressive school of French cooking exemplified by cult chef Michel Bras. Complex dishes such as chargrilled calf’s liver with mash, crisp home-cured ham, veal reduction scented with Vin Santo and parsley oil are given a homely feel by the addition of chargrilled squash and courgettes from the restaurant’s own kitchen garden. Desserts arc between a decidedly traditional warm eccles cake with Ashes Farm Wensleydale cheese to a left field beurre noisette lollipop with white chocolate fondant, milk chocolate ice-cream,cocoa bean nibs and cocoa syrup.
