The Cross at Kingussie

An 18th century water tweed mill transformed into a restaurant with rooms is the remarkable setting for some remarkable modern British cooking. Dinner is served by an open fire in the stone walled and beamed dining room. Becca Henderson and David Young have a fine line in Scottish produce. Their set menu offers two choices per course and may feature local mackerel with rhubarb salsa; Skye scallops with raisin purée and caper dressing; wild Scrabster sea bass with sauce vièrge and Speyside asparagus or Gressingham duck on creamed Savoy cabbage with chicory tarte tatin. Hot chocolate fondant is given an original twist by the addition of chilli flavoured ice cream.
