The Chesil Rectory


The beamed, simple white-walled dining room in the oldest house in Winchester (it dates back to the 15th century) is a stylised gem of a restaurant with fine luxurious and local ingredients cooked with precision by co-owner Robert Quéhan. A foie gras terrine is partnered by peaches cooked in Muscat wine; wild salmon, poached in Sauternes court-bouillon is paired with Cornish crab and Oscietra caviar. Ravioli lobster is matched with scallops, vegetable julienne and lobster bisque; Solent sea bass with crushed ratte potatoes, asparagus and lobster vinaigrette; Hampshire beef fillet with spiced foie gras and truffle sauce. Hot Valhrona fondant with popcorn ice cream or rhubarb parfait follow.
