This wedge shaped building in Brighton's trendy Seven Dials area used to be a banking hall. But since chef Sam Metcalfe opened his laid back modern bistro in 2001, you can invest your money in something more fun than a savings account. Start simply with half a dozen Irish rock oysters with shallot vinegar or share the savoury board that pulls together taster sized portions of the starters and might include garlic prawns, boudin noir with Apple and duck wonton. Mains might include sophisticated dishes such as Parma ham wrapped monkfish tail with endive tart tatin and chive butter sauce or roasted breast and confit leg of guinea fowl with rosemary jus. When the weather cooperates, the roomy decked terrace is perfect for al fresco dining.
