Overview

It doesn't get much more local than the De Beauvoir smoked salmon 'Hix cure' on the menu at this lively bistro, close to Smithfield market. Chef and owner Mark Hix cures and smokes the fish in his own back garden in the nearby De Beauvoir area of London. Its comes thickly sliced rather then carved paper thin so you can really taste it. Hix takes just as much care with the cuts of meat on offer here that might include a fillet steak cooked on the bone to improve its texture and flavour. Hix is famous for championing British food, which is reflected in dishes such as steamed Isle of Shuna mussels with Burrow Hill cider and a traditional beef flank and oyster pie. And of course there's a seasonally changing choice of oysters from around the UK including Maldon rocks and Helford natives.
