A NEW SPIRIT AT ST MARYS HALL HOTEL - THE ISLES OF SCILLY. Set in the Isles of Scilly, 28 miles off far western tip of mainland UK, St Marys Hall Hotel has an illustrious history, having been the former home of Count Louis Adolphus Leon Ferrari, a nobleman of San Marino and Knight Commander of the Holy Sepulcher of Jerusalem, who built the hotel in 1938 after visiting the Islands and meeting and marrying a local girl, Enid Tresize. Having first opened its doors as a hotel in 1967, this elegant 27 bedded Townhouse, which also has 3 suites is embarking on an exciting new chapter in its history, having undergone a major refurbishment programme which has seen all of the rooms improved and upgraded, the development and opening of Revive holistic therapy and the creation and launch of a new bar and restaurant Spirit. There are also plans to build a number of new executive suites at the hotel according to new owner Clifford Freeman. And it is not just in the fabric of the building that Clifford has exciting plans, but also in its approach to food, which has seen a major focus on provenance and quality at every level. He believes that if you are going to do something, you have to do it to the highest possible level, and that needs to filter down through everything and particularly in the food and drink that we serve, which is a passion of his. Clifford has scoured the South West of England meeting producers and manufacturers looking for the very best food and drink suppliers for everything needed to run a renowned restaurant and hotel, taking a completely fresh approach to the food the hotel sourcese, putting provenance and quality first and foremost. One of the key ingredients St Marys Hall Hotel will be using in the new restaurant, is rare breed beef, pork and lamb from Cliffords own rare breeds farm in Gloucestershire as well as local lobster and crab caught in the crystal clear waters off the Isles of Scilly and a range of Cornish fish.
