The glamorous interior of this plush hotel dining room is designed by Kelly Hoppen so expect sumptuous fabrics, shimmering diamante drapes, ceiling high wine racks, antique French mirrors and chairs and a stunning Spina chandelier. But technically brilliant chef Paul Welburn ensures the food is never overshadowed by the surroundings. How about a dazzlingly inventive combination of rich foie gras with sweetly acidic pineapple, spicy pain d’epice, a reduction of sweet white Monbazillac wine and home cured duck ham for some chewy textural contrast? And that's just for starters. Main courses such as monkfish paired with chicken wing, salsify, chargrilled leeks and a 'jus gras' (gravy enriched with chicken fat and juices) are just as novel and delicious. Round off a memorable meal with Jerusalem artichoke custard, hazelnut, mandarin and praline.
