Pared down décor of polished bare floorboards, modern leather chairs, soft lighting, and wall hung art create a sophisticated atmosphere, whilst the serried ranks of sparkling glassware signal the serious intent of chef Tom Van Zeller’s eponymous restaurant. A philosophy of using only the very finest ingredients to create modern British cuisine of the highest order is clearly illustrated with a starter of local wood pigeon, celeriac remoulade, quince, cep powder, Cox apple and pea shoots. The same imaginative approach appears in a main course of wild sea bass, cep gnocchi, white asparagus, carrot puree and Hibiscus emulsion. An extensive selection of fine wines, including 10 by the glass, is offered in a classic list.
