This intimate 20 cover restaurant is run by former Fat Duck chef Duncan Ray who has also headed up the kitchens at the renowned Pennyhill Park Hotel. Tucked away on the corner of a side street just off Hove seafront and opposite the Old Market theatre, the double aspect dining room has been simply but stylishly transformed from its previous incarnation as fishmongers with seafood themed drawings and decked out with wood tables and comfortably upholstered chairs. The menu offers four choices at each stage (Ray cooks everything himself) and focuses on elegantly composed dishes of locally sourced sustainable seafood. You might start with tea smoked trout served with beetroot, horseradish, mustard cress and ratte potato followed by skate and pork belly (yes, there's meat on the menu too) with lettuce, parsnip, palourde clam and brown butter. Desserts such as biscuit glace with hazelnut passion fruit and cocoa are every bit as impressive as the savoury courses.
