The Dining Room at Buxted Park Hotel offers guests the quintessential elegant dining experience set as it is in a grand 18th century Georgian mansion. They can relax and unwind at leisure while contemplating the modern British cuisine menu that features traditional favourites with a twist. Using seasonal locally available produce, chef Neil Davison's offerings extend from pan seared foie gras and south coast scallops, blackberry and banyuls compote to roast rump of lamb with jersey royals, confit shoulder with moroccan spices and kentish apricots. Diners can get into the mood of the occasion with dishes such as smoked trout mousse with pickled cucumber caviar and a dill vinaigrette, Sussex pork tenderloin with creamed potatoes, buttered savoy cabbage and sautéed plums.

Local Directions: From London, leave M25 junction 6 towards A22 East Grinstead and Eastbourne. Follow the A22 until you reach the roundabout with the A26. Turn left at the roundabout to A26 Tunbridge Wells. Turn right at next roundabout to the A272 Heathfield. Take an immediate left still following the A272. At traffic lights, continue straight on and the Hotel is one mile on your right. From Tunbridge Wells, take the A26 towards Uckfield and continue until the roundabout for A272 towards Heathfield. Take the first exit and immediately turn left to the A26. Continue straight on at the traffic lights and the Hotel is one mile on your right. From Brighton, take the A27 towards Lewes and join the A26 towards Tunbridge Wells. Continue straight on until the roundabout with A272 towards Heathfield. Take the first exit and turn immediately left to A26. Continue straight on at the traffic lights and the Hotel is one mile on your right.
