Since chef Laurie Gear opened Artichoke in Old Amersham in 2002 with his wife Jacqueline, his natural, finessed modern European cooking has won the restaurant a flurry of accolades, including a listing in the Good Food Guide, two AA Rosettes, and most-recently (following a post-fire refurb in 2009), the 2011 Good Food Guide Best New Entry award. Gear has recently returned from working at two-Michelin starred restaurant Noma in Copenhagen – picking up techniques from its Danish chef Rene Redzepi. In-keeping with Redzepi’s ardently regional cuisine, Gear is sourcing much of his ingredients from the Chilterns, foraging and growing his own wall of aromatic herbs. Dishes on the tasting menu display the chef’s fresh, intricate approach and include Isle of Skye scallops lightly curried, pickled carrot and coriander, artichoke purée and toasted coconut.
