The Ambrette Restaurant, 44 King Street, Margate, Kent

The Ambrette is an Indian restaurant set in the quaint George Hotel in Margate. Executive chef, Dev Biswal has shunned curries, and poppadoms in favour of marrying seasonal local Kentish produce with authentic Indian herbs and spice. Dev’s signature dish is Fillet of Freshwater Nile Perch, Pan-Grilled with Peppers, Coriander, Fenugreek and Carom Seeds. Other favourites include Charcoal Roasted Brochettes of Kentish lamb marinated in Pickles served on a bed of mildly spiced Sweet Potatoes and Char Grilled Breast of British Chicken served in an aromatic North Indian style sauce flavoured with Nutmeg, Cloves and Fresh Coriander. The dining room decor is simple and stylish and has clean white-linen table clothes, smart wooden chairs and a splash of exotic, stylish artwork.

Exquisite food. Impeccable service. Chef Dev Biswal's unique cooking is without rival - deftly spiced dishes allow the food's natural flavours to shine through

Recmmended are the Clresse (fish) starter and Gressingham Duck main
