French chef Didier Dejean opened the sweetly-named Silver Darling restaurant on Aberdeen’s coast way back in 1986. That it’s featured in many restaurant guides (including the Good Food and Michelin guides) ever since bears witness to the modern, elegant seafood that the Millau-born chef serves. Inspired by the “fresh, French” cooking of his mother, Dejean serves a seasonally-led, ever-changing menu of fish seafood dishes (though there are non-seafood options available) made with bounty from the local area and wider-Scotland. While looking out onto stunning views of the harbour, diners can tuck into Shetland seared king scallops with citrus dressing, deep fried herb leaves, Parmesan shavings and a balsamic syrup, or enjoy pan-roasted sea bass in chorizo and Guerande sea salt, with a warm salad of fennel, antiboise tomatoes and a saffron emulsion.
