Attracted to Scotland initially “for the whiskey”, French chef Eric Obry went to Aberdeenshire 12 years ago and has never left. The chef had previously worked in Michelin-starred restaurants in the south of France – and his modern French cooking at La Faisanderie reflects this culinary flair, but makes the most of the rich local produce, with Obry shooting his own game in nearby Dufftown. The restaurant is something of a hidden gem, but has attracted a steadily-growing foodie following, with its accomplished service and Obry’s refined cooking. Hearty, well-prepared dishes like best end of lamb with parsnip and mustard puree, haggis croquette and whiskey and honey sauce, and loin of venison with chanterelle mushrooms and cognac and peppercorn sauce witness the chef’s merging of French technique with prime local produce.
