Restaurant setting don't come more impressive than an 18th century Georgian mansion set in 50 acres of stunning grounds in the Wiltshire countryside. The elegantly restrained interior of dark wood flooring and burgundy red walls is in keeping with the grand setting while still managing to look pleasingly contemporary. Chef Jamie Hirst puts his Michelin starred training to good use, making most of what's served in the restaurants from scratch, even down to the ketchup. Local produce gets a Mediterranean twist in dishes such as risotto of Bath Pig Company chorizo with rocket and shaved parmesan and roasted line caught cod on vine tomatoes, capers and anchovies, served with couscous. Sunday lunch offers traditional British fare such as homemade pork faggots, mash, braised red cabbage and roast fennel.
