Brighton’s Royal Pavillion and the surrounding Regency architecture of Hove’s Brunswick Square provide the inspiration for the modern decor in this restaurant with its chandeliers and heavily gilded mirrors. Guests, including vegetarians, are invited to “graze” on seven course tasting menus which come with recommended wine pairings. A green tea and seaweed broth with Japanese mushrooms and smoked tofu begin the feast followed by rabbit, duck liver and eel terrine. A beetroot risotto comes next and then tuna carpaccio with black olive mayonnaise. Fillet and braised cheek of pork with creamed parsley root follow with chilled pear and saffron soup and coconut parfait with pineapple sorbet rounding off proceedings. If this seems too much, guests can also order from a separate a la carte menu.
