A contemporary menu touting some cutting edge cooking techniques (such as sous vide venison loin) is befitting for this polished restaurant. A minimalist approach has been taken to the decor with splashes of vermillion adding vibrancy to the otherwise monochrome palate. However, the fireworks truly begin on the plate. Starters such as cured and seared salmon with citrus marinated fennel, rye toast, wasabi mousse and soy emulsion are presented with such finesse you are unsure as to whether you should eat it or frame it for posterity. The subsequent poached duck breast with kale, confit leg and mushrooms and Perigourdine sauce with rhubarb compote, set ginger custard, pistachio mousse and honeycomb for dessert are equally well accomplished. A tasting menu with wine pairing for each course is also available.
