Castle Dawson flies the flag for Welsh food, literally so in the case of consultant chef and director Graham Tinsley, who moonlights as manager of the Welsh Culinary Team at international cooking competitions. His experience is put to good use in an extensive menu that makes the most of Welsh produce. There’s even a list of local suppliers for curious foodies. Braised and roasted pork belly vies for attention with Conwy fish pie among the mains, while the grill crackles with Welsh rib-eye, aged for up to four weeks. Housed in an old coaching inn on the site of a Cistercian abbey, the hotel has a long and colourful history with Wordsworth and the Queen of Romania reputed to have eaten in the restaurant down the centuries.
