The character of this restaurant with rooms dating from the Queen Anne period has been skilfully preserved without making it feel like a stuffy, museum artefact. Dinner is served in the high-ceilinged restaurant with delicate primrose yellow walls which provide a subtle backdrop for range of artworks. Guests can enjoy a ballotine of wild goose and guinea fowl with celeriac remoulade and spiced pears whilst gazing at the Dorset countryside through the tall windows draped in a soft indigo fabric. Many of the neighbouring estates provide the Castleman with produce so a roast loin of venison with poivrade sauce on potato rosti could come next and perhaps be followed by quince and apple frangipane tart with honey ice cream. A good selection of wines is also available.
