The Meadow

Sussex born chef Will Murgatroyd’s aim in opening this, his first solo venture was to create “a meadow in the city”, bringing a taste of the South Downs (and further afield) into the centre of Brighton and Hove. So the lamb in a warm salad starter might come from Court Garden Farm in nearby Ditching and be paired with locally sourced wild garlic and purple sprouting broccoli. Fish also features on the short, highly seasonal menu in the form of pan fried south coast bream with lobster and pink fur potato mash, wilted sea beets and chive crème fraiche. A former bank, the high-ceilinged, modern room features a large bar area, perfect for a pre-dinner glass of Deus champagne-style beer.
