So Whitby Crab is paired with artichoke, tomato and potato tuille while Yorkshire potted beef and ham hock gets a lift from asparagus veloute and beetroot relish. Main courses deal in big, robust flavours; Nidderdale lamb pie comes with faggots, braised lamb shank, horseradish lentils and Madeira Sauce - Saddle of Hare & Braised Leg with earthy wild mushrooms, roast squash and spinach and rosemary gnocci.
