Frances Atkins is one of the country’s leading female chefs and brings her considerable culinary skills and imagination to bear on the best produce from the North. So Whitby Crab is paired with artichoke, tomato and potato tuille while Yorkshire potted beef and ham hock gets a lift from asparagus veloute and beetroot relish. Main courses deal in big, robust flavours; Nidderdale lamb pie comes with faggots, braised lamb shank, horseradish lentils and Madeira Sauce - Saddle of Hare & Braised Leg with earthy wild mushrooms, roast squash and spinach and rosemary gnocci.
