The Mirabelle Restaurant
The Grand Hotel Eastbourne is a delightful wedding cake of a building, evoking the British seaside's gracious past. Originally named after its then sister restaurant the Mirabelle in London, the two are now no longer connected. The elegant dining room features large comfortable armchairs at widely spaced, linen-clad tables. Chef Gerald Röser's signature dish appears as delicate pike soufflé with fresh langoustine sauce on the a la carte and in an even more sophisticated version as pike soufflé with roast langoustine tail and lobster emulsion on the six course tasting menu. British ingredients such as confit of Sussex lamb shoulder with pommes dauphinoise and Capricorn goat's cheese from Somerset with pink peppercorn sauce also feature.
