There's a classicism at the heart of chef Paul Mottram's inventive menus that might include a sophisticated starter of broad bean soup with seared scallop, lemon scented oil and scallop roe dust and a main course of new season lamb saddle and shoulder, boulanger potato, young spinach and thyme jus. For those with limited time at lunch, the two course “60 minute” menu might include pan roast wild sea trout, tomato fondue, braised fennel and light herb butter sauce.
