Chef Matt Tebutt has become something of a fixture on our television screens of late, appearing on a number of foodie programmes. But he's no Johnny-come-lately to the restaurant business, having trained in London with the likes of Marco Pierre White and Alastair Little. Back home in Wales, he opened this acclaimed gastropub with wife Lisa in 2002 where a clean, modern design features Welsh flagstone floors and handmade furniture. The gutsy food draws on influences from across the globe. A starter of grilled polenta, gorgonzola, roasted walnuts and oregano looks to Italy while China provides the inspiration for wild bass, soy beurre blanc, ginger, black bean and spring onion.
