Peter Hauser's food is remarkably individual and a key reason that many guests return to this hotel time and time again. His constantly evolving, imaginative style is a fusion of everything that's memorable from the classic Austrian cuisine of his homeland, combined with the elegance of France and a generous helping of England. All these elements applied to the freshest ingredients - including fish and shellfish from Brixham and local Dorset meats, each creatively served with organically grown vegetables, many freshly harvested from his own walled, kitchen garden. Austrian chefs are famed for their dessert menus. Needless to say Peter's multiple choice offering is a totally sumptuous affair. Classics like Apfel Strudel are to die for, while heavenly, but light Austrian gateaux in the form of Linzer Torte and Esterhazy Torte will doubtless bring you back again. His culinary art is clearly displayed with his famous Meringue Suchard.
