They take Lancashire hotpot so seriously at luxuriously appointed Northcote Manor, they've had an Aga oven installed especially to cook them in. The resulting dish made from local heather fed Bowland lamb, Golden Wonder potatoes and served with a gently spicy pickled cabbage is like no hotpot you've ever eaten before. This level of attention to detail is not surprising from a restaurant with its own herd of rare breed British White cattle which might turn up on your plate in the form of a tartare served with cauliflower cream and marrowbone and caper toast. For a week in January, the manor becomes the culinary epicentre of England when chefs from around the UK and abroad congregate to cook in a week long festival of food and wine.
