The Montagu Arms Hotel
The oak panelled Terrace restaurant in an 18th century country house hotel on the Beaulieu estate in the heart of the New Forest provides the stage for the prodigous talents of chef Matthew Tomkinson. There's delightful gardens views, but you won't be distracted for long from dishes such as wild Lymington sea trout wrapped in Parma ham served with new seasons peas, broad beans and braised organic lettuce created with local produce and bursting with flavour and integrity. Tomkinson gives current foodie fashions short shrift without completely forsaking modernity. You won't find any foams on your plate but there's nothing outdated about a crisp croquette of free range pig’s trotter and smoked ham hock that's served with a caper and raisin puree.
