French Laundry-trained head chef Ross Melling's menu of highly accomplished modern European cooking highlights South West ingredients such as Brixham scallops with lemon purée, niçoise olive rounds and 'Rowswell's farm' confit violet potatoes or best end and shoulder of Devonshire lamb with la ratte potatoes, ratatouille and a garlic, parsley and lemon "sauce gremolata".
