Malmaison Brasserie

The vaulted ceilings and columns hint at this glamorous brasserie's former life as a church. Now the only thing being worshipped here is modern European food. The seasonally changing menu might include foie gras and leek terrine with beetroot to start, while poached Finnan haddock creamed potatoes, Galloway free range egg and buerre blanc makes for a very Scottish main course. Grills include a notable burger and aged steaks from the famous Buccleugh estate. Look out for the Home Grown and Local set lunch and dinner menu that highlights produce from select local suppliers. The extensive list of wines and spirits (carefully compiled by Johnny Walker, the hotel group's appropriately named beverage manager) is a real delight.
