Malmaison Brasserie

All leather, wrought iron and blood red walls, a meal in the brasserie of a Malmaison hotel is a bit like dining in some kinky Scottish baronial castle. Menus change seasonally so that a spring lunch might begin with delicate slices of seared, sesame crusted Albacore tuna artfully arranged around a salad of bitter frisée lettuce and strips of celeriac dressed with a perky mustard mayonnaise. A thick slice of halibut, pan fried to perfection and served with warm squid and caper salad is typical of the robust and unfussy style of cooking. Look out for the Home Grown and Local set menus at lunch and dinner that highlight produce from select local suppliers. Grills include a notable burger and aged steaks from the famous Buccleugh estate.
