Chef-patron Peter Jackson’s pride and joy is his 200 year old walled garden. Eight tons of produce including pennywort, artichokes, squashes, wild garlic, tayberries and flowers find their way each year onto the menu. Dinner in the charming white and honey panelled dining room is a multi-course affair that spotlights local Welsh produce. Crab cakes with oriental leaves, horseradish butter sauce and king prawn fritter; local sewin roulade with cockles and laverbread; salt marsh lamb, braised shoulder and leek mousse or Cardigan Bay sea bass with wilted greens and carrot crisps all make an appearance. The Grand Finale of four desserts includes berries in sweet wine jelly and homemade ice creams. There’s Welsh wine too among the eclectic list.
