The Lake Country House Hotel & Spa

There’s views of the river as it meanders past the lawns from the well-appointed dining room with its fine antiques and plush comforts. There’s treats a-plenty here thanks to chef Sean Cullingford’s cooking. Modern British in style, he knows few boundaries, serving a chilli and lime dressing with blackened fillet of red mullet on cornbread croute while a vodka and tomato sorbet lifts a rosette of caramelised scallops on creamed leeks. More Welsh wizardry is found in salmon done three ways, those Welsh vegetable emblems accompanying a carrot and cardamom purée. Green apple terrine with a cinnamon sauce and yoghurt might add a further creative twist. Courteous service is the norm here.
