Billed as “the jewel in the Gower Peninsula”, this Regency period gem with 24 acres of parkland has a lot to shout about. This is country house dining for the 21st century - luxurious yet unpretentious in style. The kitchen, under the careful guidance of chef patron Paul Davies, sources the riches of the Welsh land and sea. Loin and faggot of Gower spring lamb is partnered with wild garlic; Welsh Black beef fillet comes with red chard and port jus and organic salmon is lightly dressed with herb oil. Pembroke clotted cream adds its richness to a twice-baked citrus tart on a set menu that also includes Welsh farmhouse cheeses. Many of the wine on the globetrotting list are offered by the glass.
