Chef Martin Wishart has installed a team of his top people to re-create the style of food that has won him numerous accolades at his eponymous Edinburgh restaurant. The dishes here are all about luxurious ingredients imaginatively prepared such as langoustine ravioli, braised endive with orange, langoustine and olive oil jus or roast fillet of Buccleuch beef with a herb crust, wild mushrooms and Szechuan pepper sauce. The extensive wine list means you can do the complex food justice by ordering a bottle of 1995 Corton Charlemagne or go for a more pocket friendly Australian Semillion.
