Housed in a former cotton mill, the dining room has a sleek modern air with its Venetian blinds, polished floors and high-backed chairs upholstered in contrasting tones. Derbyshire produce is given a starring role on the modern European menu. Derbyshire blue cheese is mixed with roasted butternut squash and served in the form of a ravioli while Derbyshire lamb is served two ways with fondant potato, baby turnips, leeks and carrots. This is mostly solid, classical cooking but there’s a few surprising twists such as the spiced red wine foam that accompanies a Parma ham and fig tart. In the summer, the spacious decked terrace that overlooks the river Derwent is the place to be.
