Chewton Glen Hotel & Spa

The New Forest’s Chewton Glen, voted Best Hotel in the British Isles by Conde Nast Traveller Magazine, is at top of the luxury-tag league. Executive head chef Luke Matthews draws mainly on local or small British specialist suppliers for the lunch set menu or dinner’s table hote menu in the luxurious Marryat restaurant. Local Christchurch lobster, Quantock duck with blueberry sauce and Cornish crab join far-flung caviar which attracts a £100 supplement on a £65 dinner menu. Other high-flyers include foie gras, a loin of veal partnered with more lowly sweetbreads. British puds are bread and butter pudding and port poached pear with stilton foam. The service is as superlative as the 600 plus bin wine list.
