Armless Dragon

This contemporary bistro has been flying the Welsh culinary flag for over twenty years. Chef Paul Lane sets out his stall early in the meal with “A Taste of Wales” themed starter platters formed of around five small dishes. “Land” might feature smoked Monmouthshire chicken with avocado and Carmarthen ham crisps while sea could include Pembrokeshire spider crab tart and sewin (sea trout) pancakes with dill yoghurt. Main courses are equally as patriotic and might include sirloin of Welsh Black beef with gratin potatoes or a best end of Brecon lamb with a faggot, lamb and rosemary cake and spring greens. The traditional Welsh lamb broth “cawl” gets remade in a seafood version with spinach and saffron potatoes.
