You might be dining under the vaulted ceiling of a genuine 12th century castle, but there’s nothing outdated about the food. Chef James Duggan has worked with the best including John Burton Race and Richard Corrigan and is cooking some of the most ambitious food in Sussex. There’s modish “surf and turf” combinations such as smoked eel, foie gras, coco bean and chorizo foam and or Scallops with crisp pork belly and spiced carrot puree. Modern low temperature techniques are employed to cook a loin of pork at 61° which comes with apples, creamed shallots and braised Crubeen (pigs trotter). Hire the thatched Mistletoe Lodge tree house in the castle grounds for a highly memorable private dinner for two.
