Abstract

This minimalist townhouse hotel restaurant first came to the nation’s attention in Gordon Ramsay’s Kitchen Nightmares television series. Since then, it’s turned into a gourmet’s dream and spawned a branch Edinburgh. That’s in no small part due to the cooking of chef Geoffrey Malmedy whose CV includes stints in several multi-Michelin starred restaurants in Belgium. Expect nothing less than culinary fireworks from imaginative dishes such as ballotine of foie gras, malt and maple syrup jelly, mango and lime caramel or Scottish brown hare fillets with passion fruit compote. The fine dining experience is completed by a tasting menu that includes baby squid filled with pigs trotter served with apple compote and the only chef’s table in Scotland.
