Expect nothing less than culinary fireworks at this minimalist townhouse hotel restaurant. Talented head chef Graham Campbell has worked in some of the top restaurants in the UK and now focuses his skills Scotland's superb natural larder including, brown hare, red mullet, local roe deer, west cost langoustine and hand-dived scallops. A meal might start with a classic dressed west coast crab with a modern accompaniment of fresh herb and tomato consommé jellies and tomato sorbet and continue with a delicious roasted rack and braised shoulder of Ross-shire lamb, with a Mediterranean influenced garnish of aubergine puree, fondant potatoes and balsamic jus. Enjoy a post-dinner malt whisky in the stylish Piano Bar or take advantage of Scotland's first chef's table where you can watch the brigade prepare your special multi-course tasting menu.
